A little taste of autumn, baked right into every cozy bite.
Ingredients
- For the cookies: ½ cup unsalted butter, softened
- For the cookies: ¾ cup packed light brown sugar
- For the cookies: 1 large egg
- For the cookies: 1 teaspoon vanilla extract
- For the cookies: 2 tablespoons apple cider
- For the cookies: 1¾ cups all-purpose flour
- For the cookies: ½ teaspoon baking soda
- For the cookies: ½ teaspoon baking powder
- For the cookies: 1 teaspoon ground cinnamon
- For the cookies: ¼ teaspoon ground nutmeg
- For the cookies: ¼ teaspoon salt
- For the cookies: ½ cup finely diced peeled apple
- For the glaze: 1 cup powdered sugar
- For the glaze: 1½–2 tablespoons apple cider
- For the glaze: ¼ teaspoon vanilla extract
- For the glaze: Pinch of cinnamon
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Cream the butter and brown sugar until light and creamy. Beat in the egg, vanilla, and apple cider.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually stir the dry ingredients into the butter mixture just until combined. Gently fold in the diced apple.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving a little room between each cookie.
- Bake for 10–12 minutes, until the edges are lightly golden and the centers look just set. Don’t overbake them if you want that wonderfully soft center.
- Let the cookies rest on the baking sheet for several minutes, then transfer them to a rack to cool completely.
- Make the glaze by stirring together the powdered sugar, apple cider, vanilla, and cinnamon until smooth. Drizzle over the cooled cookies.
For an extra autumn touch, sprinkle just a whisper of cinnamon over the wet glaze. Serve the cookies slightly warm beside a cup of spiced tea while they’re still wonderfully soft and fragrant.
