Loving Parents' Hearthside Chicken & Rice

Ingredients
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 cup long-grain rice
- 4 cups chicken broth
- 1½ lbs boneless chicken thighs
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt & pepper to taste
- ½ cup heavy cream (optional, for extra comfort)
- Fresh parsley for serving
Instructions
- In a heavy pot, melt the butter with the olive oil over medium heat.
- Add the onion, carrots, and celery.
- Cook until softened — the kind of slow sauté that fills the house with warmth.
- Stir in the garlic and rice.
- Let the rice toast lightly, absorbing the buttery goodness.
- Nestle the chicken thighs into the pot.
- Season with thyme, parsley, salt, and pepper.
- Pour in the broth, bring to a gentle simmer, then cover and cook 25–30 minutes until the rice is tender and the chicken is soft enough to shred.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the heavy cream if you want a richer finish.
- Taste, adjust seasoning, and ladle into bowls. Top with fresh parsley.
