Cabin Blackberry Jam
A simple small-batch jam that captures late summer in a jar. No pectin, no fuss — just fruit, sugar, and patience.
Ingredients
- 2 lbs fresh blackberries
- 1½ cups sugar
- Juice of 1 lemon
Instructions
- Combine blackberries, sugar, and lemon juice in a wide heavy pot.
- Let sit for 1 hour so the sugar draws out the juice — you'll get a beautiful dark ruby pool before you even turn on the heat.
- Bring to a boil, stirring to dissolve the sugar, then cook at a rolling boil for 20–25 minutes, stirring frequently.
- Test for set by dropping a spoonful onto a cold plate — it should wrinkle when pushed.
- For seedless jam, strain through a fine sieve before jarring.
- Ladle into sterilised jars while hot and seal.
- The sound of the lids popping as they seal is one of summer's best small satisfactions.
