Ingredients
- Chocolate cookie crust
- 24 chocolate sandwich cookies
- 5 Tbsp unsalted butter, melted
- Pinch of salt
- Chocolate filling
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 3 Tbsp cornstarch
- 4 large egg yolks
- 5 oz semisweet or bittersweet chocolate, finely chopped
- 2 Tbsp unsalted butter
- 1 tsp vanilla extract
- Pinch of salt
- Flower topping
- 1 cup heavy whipping cream
- 2 Tbsp powdered sugar
- 1/2 tsp vanilla
- Chocolate curls or thin chocolate pieces for petals
- Fresh raspberries or strawberries (optional)
Instructions
- Heat oven to 350°F (175°C). Crush cookies into fine crumbs, mix with melted butter and salt. Press into a 9-inch pie plate. Bake for 8–10 minutes, then cool completely.
- Whisk sugar, cocoa, cornstarch and salt. In a separate bowl, whisk egg yolks with 1/2 cup milk. Heat remaining milk and cream, then temper the yolks. Cook until thick and pudding-like. Remove from heat and stir in chocolate, butter and vanilla until smooth.
- Pour filling into cooled crust and smooth the top. Place plastic wrap directly on the filling to prevent a skin. Refrigerate for at least 4 hours, preferably overnight.
- Whip cream with powdered sugar and vanilla until soft-to-medium peaks. Spread or pipe over chilled pie. Arrange chocolate curls or thin pieces in overlapping circles like petals. Add berries in the center.
Serving tip: let the pie sit at room temperature for 10 minutes before slicing. Use a knife dipped in hot water and wiped dry between cuts for cleaner slices.
Make it your own: try a mix of dark, milk, and white chocolate petals for a stunning effect, and add a dusting of cocoa powder and fresh berries for a beautiful finish.
