Warm Truth Tart
For those moments when the cold conceals a hidden sweetness — an almond crust, warm vanilla custard, and a frosted berry compote layered over the top.
Truth wears a chill like armor,
yet beneath it burns the quiet fire of honesty.
Ingredients
- Crust of contrasts: 1 cup crushed almonds
- Crust of contrasts: ½ cup chilled butter
- Crust of contrasts: 1 cup flour
- Warm vanilla custard: 1 cup cream
- Warm vanilla custard: 2 egg yolks
- Warm vanilla custard: 3 tbsp honey
- Frosted berry compote: 1 cup mixed berries
- Frosted berry compote: 2 tbsp sugar
- Frosted berry compote: ½ tsp lemon juice
Instructions
- Make the crust: rub the crushed almonds, chilled butter and flour together until it holds, then press into a tart tin.
- Make the custard: warm the cream, then temper in the egg yolks and honey and stir until it thickens.
- Make the compote: cook the berries with the sugar and lemon juice until just softened, then cool.
- Layer the cool berries over the warm custard in the crust.
- Bake at 350°F until the edges are golden and the centre holds a hidden glow, about 30–35 minutes.
- Let the tart rest — the chill will soften, the warmth will rise.
- Serve in slices and taste the fire within.
