Instructions

  1. Make pastry: combine flour, salt, and sugar.
  2. Cut in cold butter until pea-sized pieces form.
  3. Add ice water a tablespoon at a time until dough just comes together.
  4. Flatten into a disc, wrap, and chill 30 minutes.
  5. Toss apple slices with sugar, cinnamon, nutmeg, and lemon.
  6. Roll pastry into a rough 12-inch circle on parchment.
  7. Scatter grated cheddar over the centre, leaving a 2-inch border.
  8. Arrange apples over the cheese.
  9. Fold pastry edges over, pressing lightly.
  10. Brush crust with egg wash, sprinkle with sugar.
  11. Bake at 400°F for 35–40 minutes until deeply golden.
  12. Serve warm with a drizzle of honey.
